During her sophomore year at the University of Maine, she took an elective course called Intro to Food and Nutrition, and Katherine was her professor. Moms 165: Cooking with Tofu - www.MealMakeoverMoms.com | At least once a week, Liz finds herself walking down the aisles of Whole Foods. And at least once a week, a cookbook called Tofu 1-2-3 catches her eye. We love this book and yes, we love tofu. Tofu is made from the curds of soybean milk. Tofu is nutritious -- it contains iron, copper, omega-3 fats, and calcium (depending on the type of processing), and consuming soy protein can lower cholesterol levels. Oh, and it's super versatile. The trick to making tofu a regular part of your family's meal plan is to know what to do with it. So on this week's show, we share tips for squeezing the water out of tofu to impart a "meatier" texture and four recipes: Sweet and Sour Tofu, Peanut Butter Cup Pie, Strawberry Fields, and Raspberry Smoothie (the latter two will appear on Meal Makeover Moms' Kitchen next week). Moms 164: Food Day 2011 - www.MealMakeoverMoms.com | The first-annual Food Day took place earlier this week on October 24th. Think Earth Day...but for food. The event, founded by the Center for Science in the Public Interest (CSPI), aims to highlight six important principals: Reduce diet-related disease by promoting safe, healthy foods; support sustainable farms and limit subsidies to big agribusiness; expand access to food and alleviate hunger; protect the environment and animals by reforming factory farms; promote health by curbing junk-food marketing to kids; and support fair conditions for food and farm workers. Moms 161: CA Avocado Grove Tour - www.MealMakeoverMoms.com | It's not every day you get to take a tour of an avocado grove. But that's exactly what we did during our recent trip to San Diego for the annual meeting of the American Dietetic Association. The day before the conference began, we boarded a bus for Hidden Valley Ranch, a 400 acre avocado grove in Poway, CA. Thanks to the California Avocado Commission (CAC), dietitian members of the Nutrition Entrepreneurs practice group also had an opportunity to take the tour. Moms 159: Heart Healthy Eating - www.MealMakeoverMoms.com | September 29th is World Heart Day, so we decided to devote this week's show to easy tips for eating and savoring a heart-healthy diet. Back in the day, a heart-healthy diet was far from satisfying and quite restrictive. Eggs, nuts, and shrimp were often off limits, and people were urged to opt for fat-free fare. Today, research shows that a heart-healthy diet can and should include a wide array of mouth-watering and nutrient-rich foods: eggs, seafood and shellfish, canola oil (the lowest in saturated fat of all the popular cooking oils) and other good-for-you fats, nuts, fruits and veggies and so much more! In my opinion, you should have the favorite recipes of nieces and nephews as well, but particularly nieces. ps. I don't happen to be related to Liz or Janice. ESPECIALLY not Liz. And I certainly am not the child of her older sister. I mean, I don't know if she has an older sister named Amy- or Betty, or Ruth, or whatever her name might be. I mean, if she does have an older sister. Yeah, okay, I'm going to stop writing right about now.

Sensational Smoothies? YES!
It was another humid and stormy New England day -- dreary, my mood was low, even my kitchen looked drab. I went on-line to try to find some inspiration to cook and came up short until I found the Meal Makeover Moms talking about Fruit Smoothies (Moms009 Sensational Smoothies). Great Podcast -- inspiring and authoratative, but also casual and funny. I dashed to the supermarket and came home to whip up their Very Mango smoothies.Yum! The weather didn't improve, but my mood did, and my kitchen even began to look less drab! Go Moms!
