| 1 | VideoSlow-Cooker Soft Chicken Tacos | Chicken: 1/4 cup prepared tomato salsa 1 lb. chicken tenderloins 1 T. chilies in adobo sauce, finely chopped 1/2 T. chili powder 2 cloves garlic salt & pepper to taste Place all ingredients in slow cooker. Cook on low for 8 hours. When cooked, shred with a fork and return to slow cooker to soak in juices. Scoop and serve with warmed corn tortillas, lime wedges, shredded cheese, lettuce and additional salsa. Goes great with corn & black bean salad! | 2 | VideoOven-Fried Chicken Tenders and Cheesy Mashed Potatoes | CHICKEN: 1/4 cup brown mustard 3/4 cup shredded pecorino romano cheese (or parmesan) 1/2 cup grated gluten free cracker crumbs 1/4 tsp. salt 1/4 tsp. pepper 1 lb. chicken breasts Pour mustard into a small bowl. Combine cheese, crackers, salt, and pepper in a separate bowl. Dip each chicken breast in mustard, then in cheese and cracker mixture, coating evenly. Place on a greased baking sheet and bake at 350 for 30-35 minutes, or until crispy. POTATOES: 1 lb. baby Yukon gold potatoes 1/2 T. white wine vinegar 1/2 cup buttermilk juice of 1/2 a lemon 1/2 clove garlic 1/4 cup crumbled feta cheese salt and pepper chives Bring potatoes to a boil. Boil for 10-15 minutes, or until fork tender. Drain. Return to a hot pot and add white wine vinegar. Slowly add in the buttermilk (pot should be on medium low heat), lemon juice, garlic, cheese, salt and pepper. Stir until the potatoes are evenly coated. Serve potatoes warm or cold. | 3 | VideoSun-dried Tomato Buffalo Burgers | Ingredients: 1 1/2 lbs. buffalo meat (or extra lean ground beef) 2 cloves garlic 4-5 sun dried tomatoes, finely chopped 1/2 tsp. salt 1/4 tsp. pepper 1/2 cup-1 cup feta cheese (depending on your tastes) Directions: Place meat in a medium mixing bowl. Add remaining ingredients, and mix well. Shape into 6 patties. Grill (or cook on medium high heat) for 5 minutes on each side, or until desired doneness. | 4 | VideoBreakfast Brunch! | Cinnamon French Toast: 8 slices of Cinnamon Craisin Nut Bread (recipe follows) 1 egg, beaten 2 egg whites 1/4 cup skim milk (or non-dairy substitute) 1 tsp. vanilla 1/2 tsp. cinnamon 1/8 tsp. nutmeg Beat eggs, milk, vanilla, cinnamon, and nutmeg together in a medium bowl. Dip bread slices in, one at a time, coating thoroughly. Cook in a skillet or on a hot griddle (medium heat). Smother with your favorite syrup or fruit spread. A special treat we like is our cinnamon syrup. Take 1/4 cup syrup, 1/2 tsp. cinnamon, and 1/2 T. butter and microwave until it boils for about 60 seconds. Cinnamon Craisin Nut Bread: 1 1/2 cups brown rice flour 1/3 cup potato starch 1/4 cup tapioca starch 1/4 cup nonfat milk powder 2/3 T. stevia 1 T. xanthan gum 1 T. instant yeast 1 1/4 tsp. salt 2 tsp. cinnamon 2 eggs 1 egg white 1 cup water 2 applesauce 1 tsp. cider vinegar 3/4 cup craisins 3-4 T. toasted pine nuts • In a large bowl combine flours, milk powder, sugar, xanthan gum, yeast, salt, and cinnamon. Mix well. In a separate bowl (stand mixer or hand), combine eggs, egg white, water, oil and vinegar until well blended. On lowest speed, slowly add the dry ingredients until combined. Stop the machine and scrape the bottom and sides of the bowl with a spatula. Mix on medium speed for 4 minutes. Stir in craisins and nuts. Spoon into prepared pan. | 5 | VideoSpicy Chicken with Guacamole and Sweet Coconut Cornbread | Chicken: Rub 1 lb. chicken with 1 tsp. salt, 1/4 tsp. black pepper, and 1/4 tsp. cayenne pepper. Bake at 400 degrees for 20-25 minutes (depending on thickness of chicken). Top with cool guacamole (recipe below). Guacamole: Combine the juice of 1 lime and 1/4 of a medium sized red onion (finely diced). Remove avacado skins and chop in thin slices. Fold into lime and onion mixture. Sprinkle liberally with salt and combine. Coconut Cornbread: 1 cup unsweetened coconut flakes (toasted) 2 cups gfree cornbread mix 1 1/2 cups coconut milk 1 egg 3 T. agave syrup In a medium mixing bowl, combine toasted coconut flakes and cornbread mix. In a small bowl, whisk together coconut milk, egg, and agave syrup. Add to dry mix and mix well. Pour into a prepared 8x8 baking pan and bake at 400 degrees for 15 minutes, or until golden brown. Top with banana jam (recipe below). Banana Jam: 2 T. water 1/4 cup agave syrup 1 cup sliced ripe banana 1 T. lime juice In small sauce pan, bring water and agave syrup to a boil (covered). While it is coming to a boil, slice ripe banana and place in a small bowl, covering with lime juice so that it doesn’t turn brown. Mix the boiling syrup (water and agave) and add the banana and lime juice. Reduce heat to low and let bubble on low for 30 minutes, stirring occasionally. While you stir, break apart the slices of banana so that it resembles a jam-like texture. Stir more frequently in the last 10 minutes to avoid caking and burning. | 7/20/09 | Free | View In iTunes |
| 6 | VideoMeatballs | 1/2 cup gfree bread crumbs (or ground gfree crackers, like Nutthins) 1/4 cup grated Parmesan cheese 1 teaspoon dried parsley (approx. 1 T. fresh) 1/4 teaspoon garlic powder 1/8 teaspoon salt 1/8 teaspoon pepper 1 lb. extra lean ground beef 1 tablespoon milk 1 egg, lightly beaten Preheat oven to 350. Mix egg and milk in a medium bowl. Add dry ingredients. Mix until combined. Crumble meat mixture over top and mix until spices run evenly throughout the meat. Shape into 8 meatballs. | 7 | VideoMexican Lasagna | Ingredients: 1 lb. extra-lean ground beef 1/4 red onion, diced 1 T. chili powder 1 tsp. cumin 1 10 oz. can diced tomatoes in green chilies, drained 1/2 15 oz. can black beans, drained 1 tsp. hot sauce (I like Louisiana hot sauce) 8-10 corn tortillas (Trader Joe’s are gfree) Shredded Mexican cheese Preheat oven to 425 F. Brown ground beef in skillet and drain. Add onion and saute until tender (about 3-4 minutes). Add in seasonings, tomatoes, black beans, and hot sauce. Cook until heated through. Add salt & pepper, to taste. In a square baking dish, layer meat sauce, tortillas, cheese. Repeat until all the meat sauce is gone.
