The secrets to real home cooking
Anyone can follow a recipe, but the end results may vary considerably. Cooking is more than just assembling ingredients and cooking them; it's also about attitude and understanding the context of the food in relation to the culture it came from. Gianni does a wonderful job in transmitting these parts of the equation. And it is very helpful to see the various techniques in preparation. Cooking can be like a time machine; these videos show cooking philosophies that transcend the years and distance, and help us understand the "whys" as well as the "hows." I feel I'm getting to the soul of Italian cuisine with these great podcasts.
Gianni is the best
Gianni's podcast is entertaining and informative. He loves cooking, loves food, and that comes through in everything he does. He's also very good about telling you what you are and aren't looking for as far as ingredients and cooking methods go. If you want to learn how to make delicious fresh authentic Italian food, Gianni's the man.
Gianni is funny
In addition to being a great cook and excellent teacher, Gianni's little sayings crack me up. "Ba-boom!" when he smashes the garlic. "Nice a nice" when things are going well.
Very casual, yet classy.
