I use Simplenote every day and it just works perfectly - syncs across devices almost instantly, is well-designed and fast. It has exactly the right amount of functionality, and I use tags to find notes in a second. Updates don't add unnecessary features or change the workflow, which is a rare plus with apps! I dumped the bloated Evernote and Pocket for this app, and use it as a one-stop for material from the web, my brain, research, and any other source that just needs recording as text. I can then work on all that material in any device or transfer it to another app later as needed (without any intrusive formatting) into to other apps - usually IAWriter for more detailed text. Having tried and fallen away from quite a few more complex task managers, I also use it for my TODO list which stays pinned to the top - the speed, perfect sync and simplicity means I actually read it every day and even actually get things done! It's great to be able to use one app for many text-related things.
Love this app for all the things I was putting into Apple Notes, which is filling up with too many notes, making it difficult to sort through, so I use Simplenote for short term requirement to nudge my brain day to day.
The above was written a while ago and I love this little app which is not really so little and I use it every day in sync with all my devices because it's so easy to keep bits of thought and what gets forgotten in my shopping, this is a couldn't do without it "app"
The best note-taking app
I previously used another tool whose name ends in 'note': it was complicated, periodically buggy, they kept mucking around with the interface and trying to sell me stuff (as a paying subscriber). I finally lost patience with them when some update decided to mangle the date and title of any note I looked at.
Now I use Simplenote: it Just Works, all the time and on all my devices. Yes, it does less, but it does everything I need. And because it's plain text I know that I can easily get hold of copies of my notes. The iOS 9 second-window support is a very useful addition.
This is what a note-taking app should be.
(Client-side encryption would be a cool addition but I suspect can't work with smart conflict-resolution.)
