What is Precision Cooking?

Once limited to the world's best restaurants, precision cooking (commonly referred to as sous vide) is now the fastest growing kitchen appliance category. The Anova Precision Cooker represents the next evolution of precision cooking technology, making it easy and affordable for everyone to reap the benefits of this type of cooking. Precision cooking is extremely easy. It usually involves these three simple steps:

1. Attach the Anova Precision Cooker to a pot and set time and temp using the app or the device interface. Using the app, simply find what you're cooking and hit "start."

2. Put food in a ziplock bag and clip it to the side of the pot. The circulator moves water around the pot, ensuring a consistent temperature throughout.

3. Finish with a quick sear or broil, or even throw it on the grill for a nice, crispy finish.

Ok but extremely annoying timer resets.


The app itself is pretty well done, with a ton of recipes from Serious Eats proprietor J. Kenji Lopez-Alt. It also has a relatively intuitive interface. Unfortunately it’s sabotaged by poor timer functionality.

As you start a “recipe” the Anova unit heats up to target temperature. Once it reaches target temp — say 140° — the timer will start and the app will notify you. Unfortunately, if the target temp drops by even 0.1° then rises again above the target threshold, the timer resets and you will once again get a notification that it’s time to start cooking. Lather, rinse, repeat. As I write this review I’ve received no fewer than four alerts for some chicken breasts I have cooking right now.

Until the Anova team can fix this issue, I’m afraid I can’t recommend using the app for timing your cooks, which seems like it should be a core piece of functionality.

Buy Anova but not for the app


The device is fantastic and works great without the app if you do a few minutes of googling to understand how to use it. The app is really disappointing and I’ve had to shut it down to stop annoying problems. Tonight I got about 15 notifications in as many seconds that my food was done while the water was still heating. I can’t figure out how to use some app features that would be convenient. The app isn’t particularly modern looking or attractive. There are better recipes and cooking guides on the joule app, and I’ve been using them for my Anova. That said, the Anova is the best Christmas present I’ve ever received and it’s totally functional without an external device or app, which I like. The company would be well served to include more common sense instructions in the box and redesign the app top to bottom.

Great content (I.e, recipes), significantly sloppy and broken device integration.

(Incredibly glitchy and unreliable. If the actually Anova stops cooking for any reason [low water, for instance] the device's timer and the app's timer become mismatched. The Anova will reheat to the right temperature before beginning the timer again, but the app's timer won't respond at all. Also, the timer notification is inconsistent and inexact. The timer will also begin when the water is overheated, which defeats the purpose of a set it and forget it feature when using warmer water. All of these things make the app very hard to rely on for cooking.)

In general the connectivity experience with this app is just bad. Since so many important features only work halfway, I find myself setting all kinds of timers, looking at recipes without using their in app script, and generally using a hodge podge of methods to get through what is advertised as a very simple cooking method. All this app needs to do is do what is advertises well, completely, and clearly. Right now it feels very broken.
