* New 'Sweet Potato Biscuits' recipe is available.
"Soft and creamy-textured, these biscuits satisfy like a cake. Using canned sweet potatoes makes them easy to prepare at a moment's notice. I use canned sweet potatoes packed in light syrup—I just drain the potatoes and mash them with a fork. If you've got leftover sweet potatoes or yams, give them a good mashing, measure out ¾ to 1 cup, and you're good to go." — Dorie Greenspan

"It's not too much to call these the quintessential shortcake. They are pale, golden, cracked and cratery, raggedy and round, but not perfectly so. They are only a touch sweet. I don't like the shock of an unsweet biscuit against sweet berries, and I don't think cream and butter should show up for dessert without a little sugar to round them out fully. Remember, shortcakes are members of the biscuit family, and biscuits thrive on the principle of "less is more": the less you handle them, the more tender they'll be." — Dorie Greenspan
