Essential Pepin

More Than 700 All-Time Favorites from My Life In Food

This book can be downloaded and read in iBooks on your Mac or iOS device.

For the first time ever, the legendary chef Jacques Pépin collects and updates the best recipes from his six-decade career. This collection, specifically designed and enhanced for the ebook edition, makes all of the recipes instantly available and easy to find and also includes more than seventy minutes of video of Jacques Pépin himself demonstrating important cooking techniques refined through his years of experience.

In his more than sixty years as a chef, Jacques Pépin has earned a reputation as a champion of simplicity. His recipes are classics. They find the shortest, surest route to flavor, avoiding complicated techniques. Updated and streamlined for the contemporary kitchen, the recipes include Onion Soup Lyonnaise-Style, which Jacques enjoyed as a young chef while bar-crawling in Paris; Linguine with Clam Sauce and Vegetables, a frequent dinner chez Jacques; Five-Peppercorn Steak, his spin on a bistro classic; Mémé’s Apple Tart, which his mother made every day in her Lyon restaurant; and Warm Chocolate Fondue Soufflé, part cake, part pudding, part soufflé, and pure bliss.

Essential Pépin spans the many styles of Jacques’s cooking: homey country French, haute cuisine, fast food Jacques-style, and fresh contemporary American dishes. Many of the recipes are globally inspired, from Mexico, across Europe, or the Far East.

This spectacular enhanced ebook truly is the essential Pépin.

From Publishers Weekly

Jul 18, 2011 – One of the great cookbook masters of the world, Pepin has published 26 volumes of recipes (including one with Julia Child). In this, which might be considered his opus, he offers more than 700 of his best French and French-accented dishes from decades of cooking and teaching. They're simple without being dumbed down; approachable yet still adventurous. Whether he's explaining how to make Escoffier quenelles with mushroom sauce; black sea bass gravlax; chicken livers saut ed with vinegar; duck cassoulet; artichoke hearts with tarragon and mushrooms; or tarte tatin, he makes it seem doable and shares tidbits of wisdom to boost confidence and kitchen knowledge. His head notes are brief but informative, warm but not cloying. Pepin's own line drawings accompany the recipes, and they are, appropriately, at once homey and sophisticated. A DVD teaching a variety of cooking techniques accompanies the book, promising to make even the more challenging recipes less intimidating. For serious cooks and beginners alike, this is an instant classic that would enhance almost any collection.

A Perfect Anthology and Why You Need This Cookbook

More than any other celebrity endorsed cookbook, I recommend Jacque's "Essential Pepin" for every cook of any level. The main reason? Practicality. Sure, Nobu Matsuhisa and Wolfgang Puck really can cook, they're geniuses even. But the fact that remains is that their dishes and their ingredients are hard to find and absolutely impractical unless you live in California or parts of the country where you can instantly access such hard-to-find ingredients. Pepin has taken gourmet cooking, applied it to the home kitchen effortlessly. This book is by far one of the best celebrity cookbooks I have ever read. The recipes are simple, exciting, timeless and of course delicious (isn't all french cooking?). Cooking at home should not be a chore, in fact it can be therapeutic in many ways. Such benefits of cooking at home include relieving stress and losing weight (saving money too!). There is a myth that we as an American society do not have enough time to cook or that it isn't frugal. With Jacque's fantastically well-organized cookbook, you'll find that it is very easy to cook fantastic recipes at home.

Lacks iPad features

Essential Pepin iBook version does not allow consumers to highlight and make notes. The lack of these features renders this iBook useless to serious/experienced cooks. Purchase the hard copy if you want to make notations and/or highlight.
