She begins with advice on choosing vegetables, learning to use a knife, and composing a vegetarian menu. She lists dishes alphabetically, from artichoke and scallion saut over garlic-rubbed toast to zucchini cake. Appealing dishes feature black-eyed peas, kale, and rhubarb.
