NUTR 223 The Principles of Nutrition is a course designed for the student in the field of allied health and for students majoring in Dietetic Technology. Emphasis on the functions of the major nutrients and their role in maintaining good health, beginning at the cellular level and extending to include interactional properties of nutrients and diets.

Merely adequate science

This is an interesting group of videos but in almost every facet their is science missed, glossed over, or completely ignored. A couple of examples:

High fructose corn syrup: in the video, she covers none of the metabolic process in which fructose is converted to glucose in the liver (which is why long distance runners are often recommended a hfcs rich drink to restore glycogen levels in the liver because it is the most efficient way to do so based on how our body metabolizes monosaccharides). It is a false hood that fructose is not converted to glucose.

Calcium: the watcher is given no details on calcium as a whole. No rda (recommended dietary allowance) exists, only an AI (adaquate intake) does. That means while the number of 1000+ mg of calcium is an estimation and not enough conclusive research exists to establish an rda. On top of that calcium absorption maximums (500mg) isn't covered. Our bodies can only absorb a maximum amount of calcium in a single sitting, nor are the most effective formats of calcium supplement given to body conditions. For example calcium citrate is considered one of the best forms since calcium absorption increases in a high acidic environment.

All and all, these videos have good input but contain only small glances at the subjects contained. A good starting point, but seriously lacking in comprehensive science. Additional research should be done if any of these videos subjects have interested you.


NEJM 2008 reported that type ! diabetes is caused by 1) genetic predisposition 2) chromium and vanadium deficiency 3) intestinal permeability (leaky gut) caused by a type of gluten called gliadin and Dairy introduced before the first 3 years of age.
NEJM recommended cutting out all forms of gluten. All Seeds and All grains contain gluten which allow it to germinate and sprout. Gluten prevents the healing of the villa. Dairy is the antigen that passes into the blood stream that engages the immune system to attack. Collateral damage occurs when the immune system mistakes the beta cells for bovine. Auto-immune means the immune system is attacking self. Eliminate the cause of type 1 diabetes and the chromosomes will correct the condition in 24% of type 1 and restore their health. This means never consume Dairy, Bovine, Casine etc. and Never consume unsprouted Seeds or Grains. Don't take my word for it.. Research NEJM: Dairy/Gluten/Diabetes correlation 2008 sturdy.
