America's Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three-dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

Great new food podcast

Mr. Kimball it is so great that you now have a weekly podcast. I really enjoy your interaction with the callers and the Hot/Not segment. Keep up the great work.

"Detoxing" - from what?

I am in shock that you would have a complete quack on to talk of "detoxing" and all kinds of unscientific, unproven nonsense without any kind of skeptical counterpart in your interview. This pseudo-medicine has been debunked by real science over and over, yet Americans spend loads of money getting colon cleanses (used to be called enemas) and going on fasts that do nothing more than deprive our bodies of nutrients and promote yo-yo weight loss.

I'm all for healthy eating, and proven nutritional tips, but please do not give an open forum to someone who is pushing costly - and possibly dangerous - quackery. Have a licensed, clinical nutritionist or dietician on as a counterpart, and soon.


Originally I review this as great, 5 stars. All the ideas and evidence-based recipes you'd expect from Mr. Kimbell and ATC.

But now I've heard the biodiversity episode and, much, much worse, the "cleansing" episode.

There is so much ignorance and non-rational thinking in these two well-debunked myths! No, biodiversity is a fuzzy-thinker myth. Cleansing is a snake-oil type scam.

It is incredibly surprising that a show dedicated and based on rational, empirical evidence now regularly brings on fake scammers and "explores" their fuzzy, irrational, easily disproved ideas. Really, if we must try and expand the horizons, why not go for crazy ideas that have an actual basis in science and medicine? Restricted calorie and the Med. diet spring easily to mind.

Really, this is important. Science is around for a reason: it works.
